The mill dates back to the 11th century and is powered by the flowing waters of the Jeker. The wooden water wheel still turns every day - not for show, but for real: this is where flour is milled like it used to be. Inside, you can see how grain is ground via centuries-old millstones into artisan spelt flour, which then goes straight into the bakery.
Next to the mill is an artisan bakery where you literally taste what has been milled. Everything here revolves around sustainable, locally grown grains, especially spelt from Limburg soil. The bakery is known for its flans, sourdough bread and crispy croissants, and you can watch the dough being kneaded, baked and sold. The smell alone makes a visit worthwhile.
The Bishop's Mill is open to visitors and invites you to do more than just walk in. Here you can see how the mill works, learn more about ancient grain or take part in a short guided tour. For children, it is extra fun to see how the wheel turns and how something as simple as flour comes to life in an oven full of Limburg traditions.
What makes the Bishop's Mill so special is its atmosphere. Despite its central location, the yard with its mill, courtyard and bakery feels like a small village in the city. You can hear the sloshing of the river Jeker, smell fresh bread and sit with your coffee on a wooden bench while the city rushes on. Time seems to stand still for a moment here, in a pleasant way.
The Bishop's Mill is more than heritage or a fine place to buy bread. It is a living story of how old techniques and new insights come together, with respect for nature, food and craftsmanship. Whether you come for a flan, a look around the mill or just for the peace and quiet: this is a place that will stay with you.
